ε- Polylysine is a homopolymer composed of 25-35 L-lysine residues, produced by fermentation with Streptomyces albicans under aerobic conditions. It is an ideal natural antibacterial agent for extending shelf life, with high natural antibacterial activity against various fungi, Gram positive bacteria, Gram negative bacteria, and their spores.
